Ingredients
  • 1 Tablespoon olive oil
  • 1/2 Pound 93% lean ground beef
  • 1 onion
  • 2 carrot
  • 2 garlic clove
  • 2 Cup spinach
  • 15 Ounce canned crushed tomatoes
  • 1 Ounce tomato paste
  • 1 Teaspoon oregano
  • 1 Teaspoon basil
  • 2 potato
  • 1/2 Cup ricotta cheese
  • 1/4 Cup oat milk
  • 1/4 Teaspoon nutmeg
  • 1 1/2 Cup broccoli florets
Directions
  • Make the bolognese: In a large deep pot, heat the olive oil and beef. Brown the meat and break it into smaller pieces with your spoon until cooked through. This takes about 10 minutes.
  • Add carrots, onions, and garlic; season with oregano and basil. Saute the vegetables and beef for 5 more minutes. Add spinach and saute one more minute.
