Ingredients
  • 1 Teaspoon olive oil
  • 2 Cup snow peas
  • 12 Ounce canned salmon packed in water
  • 1 Teaspoon dijon mustard
  • 1/4 Cup panko crumbs
  • 1/4 Cup red onion
  • 1 Teaspoon capers
  • 1/4 Teaspoon black pepper
  • 1 Tablespoon olive oil
  • 3 Cup spinach
  • 1/2 Cup goat cheese
  • 1/4 Cup sliced almonds
  • 1/4 Cup cooked red beets
  • 1 Tablespoon olive oil
  • 1/4 Teaspoon salt
Directions
  • Make the salmon patties: add salmon, mustard, panko crumbs, red onion, capers, and pepper to a food processor. Mix until the ingredients are roughly combined, don’t over mix.
  • Add olive oil to a pan, once warm scoop out ¼ cup of the salmon mix and add it to the pan. Form into a patty with the spatula. Cook 3 minutes per side.
