Ingredients
  • 1/2 Cup red lentils
  • 2 Cup water
  • 1 eggplant
  • 1/2 onion
  • 3 garlic clove
  • 1/2 Cup panko crumbs
  • 1/2 Cup oat flour
  • 1 Teaspoon oregano
  • 1 Teaspoon basil
  • 1 egg
  • 1 Teaspoon salt
  • 1 Teaspoon pepper
  • 4 Tablespoon olive oil
  • 1 cucumber
  • 1 red bell pepper
  • 4 Tablespoon parmesan cheese
Directions
  • Fill a small pot with the water and bring to a boil. Add the red lentils, reduce to a simmer, and cook for 20 minutes.
  • While the red lentils cook, add the eggplant and onion to a pan and sauté for 10 minutes.
