Ingredients
  • 1 Pound 93% lean ground beef
  • 1 egg
  • 1/4 Cup bread crumbs
  • 1/4 Cup grated parmesan cheese
  • 1/4 onion
  • 2 garlic clove
  • 3/4 Teaspoon salt
  • 1/4 Teaspoon pepper
  • 1/2 Cup long grain white rice
  • 1/2 Cup tricolor quinoa
  • 1 3/4 Cup water
  • 1 Tablespoon olive oil
  • 1/4 Teaspoon salt
  • 2 avocado
Directions
  • Preheat oven to 400 degrees F. / 204 degrees C.
  • Make the meatballs: add beef, egg, bread crumbs, cheese, onion, garlic, salt and pepper to a bowl. Mix with a spoon until incorporated. If mixture is not holding together add a tablespoon or two of water.
