First, let's make our falafel mix. Add parsley, chickpeas, garlic, cumin, salt, pepper, and flour to a food processor. Blend until a paste forms.
Transfer mix to a bowl, cover and freeze for 45 minutes. You can also do this mix the night before and refrigerate.
While the falafel mix is cooling, let’s make sweet potato fries. Preheat your oven to 400 degrees F. / 204 degrees C. Cut the sweet potatoes in the shape of fries. Add to a baking tray drizzle with oil. Optionally season with salt, pepper, garlic powder, and paprika. Bake for 15 minutes, flip over and bake for 10 more minutes.
