Directions

Step 1
Add olive oil to a pan and sauté the onions, stirring frequently. The onions will be on the stove throughout the entire recipe. We want to caramelize them, which is a long and slow process. The sweetness of the caramelized onions will make this dish delicious.
Step 2
While the onions are caramelizing, add water to a pot and then add the lentils. Cover the pot and cook over medium heat for 20 minutes. Keep an eye on the onions while the lentils are cooking, stirring them frequently to prevent burning. If they start to dry out or burn, add a splash of water and continue cooking and stirring.
Step 3
After the lentils have cooked for 20 minutes, uncover the pot, add the rice, and additional water. Stir and cover the pot. Cook over low heat for another 20 minutes. Once done, remove the pot from the heat and let the rice and lentils rest for 10 minutes in the covered pot. After resting, add cumin and salt, and fluff the rice and lentils with a spatula to combine.
