Ingredients
  • 2 Tablespoon olive oil
  • 1 carrot
  • 1 onion
  • 2 garlic clove
  • 1 Tablespoon ginger paste
  • 1 Tablespoon curry powder
  • 1 Teaspoon turmeric
  • 3/4 Cup red lentils
  • 1/2 Cup cilantro
  • 14 1/2 Ounce canned crushed tomatoes
  • 13 1/2 Ounce canned unsweetened coconut milk
  • 1 Teaspoon salt
  • 1/4 Teaspoon black pepper
  • 1 Cup mini potato
  • 1 avocado
Directions
  • Add olive oil to a pan along with the carrot and onion. Cook for 8 minutes, until the onion looks golden brown.
  • Add the garlic, ginger, and curry powder, and turmeric. Cook for 2 minutes.
