Ingredients
1/2 Cup red lentils
2 Cup water
1 eggplant
1/2 onion
3 garlic clove
1/2 Cup panko crumbs
1/2 Cup oat flour
1 Teaspoon oregano
1 Teaspoon basil
1 egg
1 Teaspoon salt
1 Teaspoon pepper
4 Tablespoon olive oil
1 cucumber
1 red bell pepper
4 Tablespoon parmesan cheese
Directions
Fill a small pot with the water and bring to a boil. Add the red lentils, reduce to a simmer, and cook for 20 minutes.
While the red lentils cook, add the eggplant and onion to a pan and sauté for 10 minutes.
