Ingredients
  • 1/4 Cup olive oil
  • 3 onion
  • 2 Cup water
  • 1 Cup green lentils
  • 2 Cup water
  • 1 Cup basmati rice
  • 2 Cup water
  • 1 Teaspoon cumin
  • 1/4 Teaspoon salt
  • 2 cucumber
  • 2 yellow bell pepper
  • 1 Cup strawberries
  • 2 figs
Directions
  • Add olive oil to a pan and sauté the onions, stirring frequently. The onions will be on the stove throughout the entire recipe. We want to caramelize them, which is a long and slow process. The sweetness of the caramelized onions will make this dish delicious.
  • While the onions are caramelizing, add water to a pot and then add the lentils. Cover the pot and cook over medium heat for 20 minutes. Keep an eye on the onions while the lentils are cooking, stirring them frequently to prevent burning. If they start to dry out or burn, add a splash of water and continue cooking and stirring.
