Ingredients
  • 1/4 Cup quinoa
  • 1/2 Cup water
  • 1 Teaspoon olive oil
  • 1 carrot
  • 1 zucchini
  • 1 Cup chickpea flour
  • 2 Teaspoon baking powder
  • 1/2 Teaspoon cumin
  • 1/2 Teaspoon garlic powder
  • 1 Cup oat milk
  • 1 avocado
Directions
  • Make the quinoa: Add the quinoa and water in a pot. Cook for 15 minutes on low heat. Set aside.
  • While the quinoa is cooking, cook the vegetables: Add olive oil to a pan, once warm add carrots and zucchini. Cook for 8 minutes or until soft. Set aside.
