1/4 Cup chickpeas
1/4 cucumber
1/2 celery
2 Tablespoon kalamata olives pitted
1/2 Teaspoon capers
1 Tablespoon greek yogurt
1/2 Teaspoon dijon mustard
1 Tablespoon dill
1 Ounce crackers
Directions
Add mashed chickpeas, chopped cucumber, chopped celery, chopped kalamata olives, chopped capers, Greek yogurt, Dijon mustard, lemon juice, chopped dill, salt, and pepper to a bowl. Mix until well combined.
Pack the chickpea salad with a side of crackers in the lunchbox.
