  • 1 chicken thighs
  • 1 Teaspoon olive oil
  • 1/2 Teaspoon paprika
  • 1/2 Teaspoon cumin
  • 1/4 Teaspoon oregano
  • 1/4 Teaspoon garlic powder
  • 1/4 Cup tricolor quinoa
  • 1/2 Cup water
  • 1/4 Cup canned black beans low sodium
  • 1/4 avocado
Directions
  • Pre-heat the oven to 375 degrees F. / 190 degrees C.
  • Place chicken thighs in a baking tray and add some olive oil, paprika, cumin, oregano, and garlic powder. Rub well into chicken with clean hands. Bake for 50 minutes.
