Ingredients

3 Cup
water
2 Cup
sweet corn
5 Ounce
tuna canned in water
2
egg
1/2 Cup
parsley
1
garlic clove
2 Tablespoon
whole wheat flour
2 Tablespoon
panko crumbs
2 Tablespoon
oat milk
1/2 Cup
parmesan cheese
2 Tablespoon
olive oil
2 Cup
broccoli florets
1
red bell pepper

Directions

Step 1
Add water to a pot and bring to a boil. Add corn and cook for 6 minutes. Drain and set aside. While the corn is cooking, steam the broccoli. To do this, place the broccoli florets in a steamer basket over boiling water, cover, and steam for 5-7 minutes, or until tender.
Step 2
Add the cooked corn, tuna, egg, parsley, garlic, flour, panko bread crumbs, oat milk, and cheese to a food processor and mix until incorporated. Scoop out 2 Tbsp of the mix and place on a pan greased with olive oil. Press down with your spatula to give it a patty shape. Cook for 3 minutes, flip over and cook for 2 more minutes.
