Ingredients
  • 1 flour tortilla
  • 2 Tablespoon refried beans
  • 1 Tablespoon mild salsa
  • 1/4 Cup vegan shredded mozzarella cheese
  • 1/4 cucumber
  • 3 cherry tomatoes
Directions
  • Spread the beans, salsa, and vegan mozzarella cheese on one side of the tortilla. Fold the other side over. Then add it to a pan and cook until the tortilla is golden and the cheese has melted.
  • Pack the quesadilla with a side of sliced cherry tomatoes and cucumbers.
