Quesadillas and Veggies

Step: 1
Spread the beans, salsa, and vegan mozzarella cheese on one side of the tortilla. Fold the other side over. Then add it to a pan and cook until the tortilla is golden and the cheese has melted.
Step: 2
Pack the quesadilla with a side of sliced cherry tomatoes and cucumbers.
