water
1/2 Teaspoon
salt

butter
1 Cup
israeli couscous
1/4 Cup
spinach
1/4 Cup
feta cheese
1 Pound
93% lean ground beef
1/4
onion
1/4 Teaspoon
salt
1/8 Teaspoon
pepper
1 Teaspoon
garlic powder
1/4 Cup
parsley
1/4 Cup
feta cheese
2
cucumber
2
tomato

Directions

Step 1
Start by making the couscous: add the water, salt, and butter to a pot. Bring to a boil, then stir in the couscous. Cover the pot and lower the heat. Cook on low heat for 8 to 10 minutes, stirring occasionally.
Step 2
Once done cooking the couscous, remove from heat and add the spinach and feta cheese. Stir until incorporated and the feta cheese has melted.
Step 3
Prepare the meatballs: Add the beef, onion, salt, pepper, garlic powder, parsley, and feta cheese to a bowl and mix until combined. Take a heaping tablespoon of the mix and shape it into a ball. Repeat until the mixture is finished.
