2 carrot
2 Tablespoon unsweetened coconut flakes

Directions
Add flour, baking powder, cinnamon, and salt in a bowl and mix until incorporated. Set aside.
In another bowl combine the oat milk, maple syrup, oil, and vanilla. Once combined, fold in the grated carrots, coconut flakes, and chopped walnuts.
