Ingredients
  • 1 corn on the cob
  • 1 flour tortilla
  • 2 Tablespoon refried beans
  • 1 Tablespoon mild salsa
  • 1/4 Cup vegan shredded mozzarella cheese
  • 1/4 cucumber
Directions
  • Fill a pot with water and add the corn. Bring to a boil and boil for 7 minutes. Once done, remove the corn from the boiling water.
  • Spread the beans, salsa, and vegan mozzarella cheese on one side of the tortilla. Fold the other side over. Then add it to a pan and cook until the tortilla is golden and the cheese has melted.
