Directions

Step 1
Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic and sauté for 3–4 minutes, until fragrant and translucent.
Step 2
Add the diced carrot and finely diced celery. Sauté for 5 minutes, until the vegetables begin to soften.
Step 3
Stir in the tomato paste and cook for 1–2 minutes, stirring constantly to deepen the flavor.
Step 4
Add the lentils, paprika, garlic powder, and cumin. Stir well to coat everything evenly.
