Pre-heat the oven to 425 degrees F. / 218 degrees C.
First lets prepare the tofu: In a bowl add the tofu and olive oil. Sprinkle the cornstarch on top and toss together.
Spread tofu on a lined baking sheet and bake for 25 minutes or until browned around the edges.
While the tofu is baking let’s make the rice. Pace water in a pot and bring to a boil. Add the basmati rice and salt, reduce heat to low, cover the pot and cook on low heat for 20 minutes.
