Tuna Sweet Corn Patties

Ingredients
  • 3 Cup water
  • 2 Cup sweet corn
  • 5 Ounce tuna canned in water
  • 2 egg
  • 1/2 Cup parsley
  • 1 garlic clove
  • 2 Tablespoon whole wheat flour
  • 2 Tablespoon panko crumbs
  • 2 Tablespoon oat milk
  • 1/2 Cup parmesan cheese
  • 2 Tablespoon olive oil
  • 2 Cup broccoli florets
  • 1 red bell pepper
Directions
  • Add water to a pot and bring to a boil. Add corn and cook for 6 minutes. Drain and set aside. While the corn is cooking, steam the broccoli. To do this, place the broccoli florets in a steamer basket over boiling water, cover, and steam for 5-7 minutes, or until tender.
  • Add the cooked corn, tuna, egg, parsley, garlic, flour, panko bread crumbs, oat milk, and cheese to a food processor and mix until incorporated. Scoop out 2 Tbsp of the mix and place on a pan greased with olive oil. Press down with your spatula to give it a patty shape. Cook for 3 minutes, flip over and cook for 2 more minutes.
