Ingredients
  • 12 asparagus
  • 1 3/4 Cup water
  • 1 Cup basmati rice
  • 16 Ounce ground lamb
  • 2 Cup spinach
  • 2 Tablespoon mint
  • 1 Teaspoon parsley
  • 1 Teaspoon oregano
  • 1 Teaspoon cumin
  • 1/2 Teaspoon salt
  • 1/4 Teaspoon pepper
  • 2 Tablespoon avocado oil
  • 1/4 red onion
Directions
  • Pre-heat the oven to 400 degrees F. / 190 degrees C. Remove the bottom tough part of the asparagus. Place the asparagus on a baking tray and rub with some avocado oil. Roast for 15 minutes.
  • While the asparagus cook, make your rice. Add the water and rice to a pot. Bring to a boil and reduce the heat to low. Cover the pot and cook on low heat for 20 minutes. When done cooking fluff rice with a fork.
