Add lentils and water to a pot. Bring to a boil and reduce to a simmer. Cook for 15 minutes.
While the lentils are cooking, steam cook the carrots and cauliflower. I like to do this by adding water to a pot then placing a colander on top. Place the vegetables on the colander and cover the pot loosely with a lid. Cook until your vegetables are soft over high heat. It took me about 15 minutes.
