  • 1 1/2 Cup water
  • 1/2 Teaspoon salt
  • 1/2 Tablespoon olive oil
  • 1 Cup israeli couscous
  • 1/2 Tablespoon olive oil
  • 4 egg
  • 4 Tablespoon water
  • 2 Cup spinach
  • 1/2 Cup feta cheese

  • For the couscous: place the water in a pot and bring to a boil. Add the salt and olive oil.
  • Add the couscous, stir, and lower the heat. Cover the pot and cook for 8 minutes, stirring occasionally so it won't boil over the pot.
  • While the couscous is cooking, prepare your eggs. Place olive oil in a separate pan, once warm add the 4 eggs and the water around the edges to create some steam inside the pan. Cover the pan and cook for 5 minutes. Once done, remove the eggs from the pan and set aside.
