Ingredients
  • 1 plantain
  • 1/2 Cup low fat coconut milk
  • 3 egg
  • 1 avocado
  • 1 Tablespoon olive oil
Directions
  • Without peeling the plantain, cut the ends off. Then make an incision lengthwise from the top of the plantain to the bottom. With the skin still on, cut the plantain into 3 portions.
  • Fill a pot with water and bring to a boil, add the plantain pieces and cook until soft, about 15 minutes. Save the water the plantains were cooked in you will need it later.
