  • 8 Ounce cod fillet
  • 1 1/2 sweet potato
  • 1/2 potato
  • 1 carrot
  • 1 egg
  • 1 Teaspoon mint
  • 1 Teaspoon dill
  • 2/3 Cup gluten free rolled oats
  • 1 Tablespoon lemon zest
  • 1/4 Teaspoon salt
  • 1 Tablespoon avocado oil
  • 1/2 avocado
  • 1/2 cucumber

  • Preheat the oven to 400 degrees F./ 204 degrees C.
  • Place cod on a baking tray and brush with avocado oil on both sides. Bake for 15 minutes.
  • While the fish bakes add the sweet potatoes, the potatoes, and the carrots to a pot and cover with water. Bring to a boil and cook for 10 minutes or until soft. Then drain and set aside.
