Ingredients
  • 1 Pound chicken breast filet
  • 1 Tablespoon olive oil
  • 1 Teaspoon garlic powder
  • 1/2 Teaspoon salt
  • 1/4 Teaspoon black pepper
  • 1/4 Cup hummus
  • 1 Teaspoon dijon mustard
  • 1/2 Teaspoon lemon zest
  • 3 Tablespoon lemon juice
  • 2 Teaspoon capers
  • 3 Teaspoon capers
  • 1 garlic clove
  • 1 Teaspoon salt
  • 6 Cup romaine lettuce
  • 1/2 Cup parmesan cheese
Directions
  • Preheat the oven to 375 degrees F. / 190 degrees C. Add chicken to a baking tray and season with olive oil, garlic powder, salt, and pepper. Bake for  40 minutes.
  • Make the salad dressing: add hummus, mustard, lemon zest, lemon juice, capers, caper brine, minced garlic clove, and salt to a bowl. Whisk well. Add to lettuce and mix.
