Directions

Add quinoa and water to a pot and cover. Cook on low heat for 15 minutes, then remove the pot from heat and let rest covered for 10 minutes.

Next, make the beef and veggie mix. Add oil to a pot, once hot add the beef and season with salt, pepper, and garlic powder. Cook for 10 minutes, frequently separating the beef with a wooden spoon as it cooks.

Next add the onion and carrots, cook for 6 minutes.
