Ingredients
  • 1/4 Cup quinoa
  • 1/2 Cup water
  • 1 Tablespoon avocado oil
  • 1 Pound 93% lean ground beef
  • 1/2 Teaspoon salt
  • 1/4 Teaspoon pepper
  • 1 Teaspoon garlic powder
  • 1 onion
  • 2 carrot
  • 1 Cup canned crushed tomatoes
  • 2 Cup pattypan squash
  • 2 Cup strawberries
Directions
  • Add quinoa and water to a pot and cover. Cook on low heat for 15 minutes, then remove the pot from heat and let rest covered for 10 minutes.
  • Next, make the beef and veggie mix. Add oil to a pot, once hot add the beef and season with salt, pepper, and garlic powder. Cook for 10 minutes, frequently separating the beef with a wooden spoon as it cooks.
