Ingredients
  • 1 Tablespoon olive oil
  • 1 carrot
  • 1 zucchini
  • 3 egg
  • 1/2 avocado
Directions
  • Add olive oil to a pan. Once warm add grated carrots and zucchini. Saute for 8 to 10 minutes.
  • Add the eggs to a bowl and beat them lightly. Add the beaten eggs on the pan on top of the vegetables. Let sit for 3 minutes on low heat. Then gently mix frequently to scramble the eggs. Cook for 5 more minutes.
