Directions
Preheat the oven to 400 degrees F./ 204 degrees C.
Place cod on a baking tray and brush with avocado oil on both sides. Bake for 15 minutes.
While the fish bakes add the sweet potatoes, the potatoes, and the carrots to a pot and cover with water. Bring to a boil and cook for 10 minutes or until soft. Then drain and set aside.
