For the chicken:

  • ¼ teaspoon of paprika

  • ½ onion, finely chopped
  • ½ red bell pepper, finely chopped
  • 2 cloves of garlic, finely chopped
  • ¼ cup of cilantro, finely chopped
  • ¼ teaspoon of salt
  • ¼ teaspoon of garlic powder
  • ¼ teaspoon of paprika
  • ¼ teaspoon of cumin
  • ¼ teaspoon of curry
  • ¼ teaspoon of chili powder
  • 1 cup of marinara sauce
  • 1 ¼ cups of vegetable broth
  • 1 cup of white basmati rice
  • ⅔ cup of frozen peas

Procedure

Step 1:
Add the chicken to a large bowl and add olive oil, salt, garlic powder, paprika, and cumin. Use clean hands to mix the chicken in the mixture.

Step 2:
Add olive oil to a large skillet and place it over medium-high heat. Once the oil is hot, add the chicken and cook until it's browned, about 4-5 minutes, then flip and cook for another 4-5 minutes. Remove from the skillet and transfer to a plate.

Step 3:
In the same skillet, you'll make your sofrito by adding the finely chopped onion and red bell pepper. Sauté for 2-3 minutes, then add the garlic and sauté for 30 seconds. Next, add your spices: salt, garlic powder, paprika, cumin, curry, and chili powder. Add the rice and mix it to incorporate with the spices. Cook for 30 seconds. Then, add the marinara sauce and vegetable broth, the peas, and the cilantro. Stir well to combine.

Step 4:
Place the previously browned chicken on top. Reduce the heat to low, immediately cover the skillet, and cook for 20 minutes. After 20 minutes, remove the skillet from the heat and let it rest covered for 10 minutes. Serve immediately. Garnish with cilantro and serve with a squeeze of fresh lemon juice. Enjoy!

Recipe #2: Rice with Lentils

Ingredients:

  • 2 tablespoons of olive oil
  • 1 ½ finely chopped onions
  • ⅓ cup of green lentils
  • 4 cups of water for the lentils
  • 2 cups of water for the rice and more for the onions to taste
  • 1 cup of white rice
  • 1 teaspoon of cumin
  • Salt to taste

Procedure

Step 1:
We begin by caramelizing the onion: add olive oil and onion to a skillet and cook for 6 minutes, stirring constantly. Add 3 tablespoons of water to the onion and continue cooking while stirring constantly.

Step 2:
While the onion is cooking, add the lentils and 4 cups of water to a pot. Cover the pot and cook for 40 minutes. If it needs more water while cooking, add it.

Step 3:
Continue cooking the onion until it is completely golden brown, stirring constantly. If you see it sticking to the pan, add a little water and stir constantly until you achieve golden, caramelized onions.

Step 4:
When the onion is ready, add the rice, a pinch of salt, and cumin. Cook for 1 minute. Add two cups of water. Stir, cover, and cook on low heat for 20 minutes. Remove it from the pot and let it rest for 10 minutes.

Step 5:
When the lentils are soft and the liquid has been absorbed, add a pinch of salt and stir to incorporate. Add the cooked lentils to the prepared rice with onions. Stir to combine the lentils with the rice and onions and serve.

Recipe #3: Chicken with Vegetables

Ingredients:

  • 4 chicken thighs
  • 5 potatoes, cut into wedges
  • 1 bag of frozen broccoli
  • 2 tablespoons of olive oil
  • ½ teaspoon of salt
  • ¼ teaspoon of garlic powder
  • ¼ teaspoon of paprika
  • ¼ teaspoon of cumin
  • ¼ teaspoon of curry

Procedure

Step 1:
Preheat the oven to 400 degrees F (204 degrees C).

Step 2:
Place the chicken, potatoes, broccoli, oil, and seasonings in a large baking tray. Mix everything with clean hands to season.

Step 3:
Bake for 50 minutes, and enjoy when finished.

Recipe #4: Mediterranean Salad

Ingredients:

  • 1 container of quartered cherry tomatoes
  • 1 cup of finely chopped parsley
  • 1 can of low-sodium chickpeas (rinsed and drained)
  • Juice of 1 yellow lemon
  • 1 cup of crumbled feta cheese

Step 1:
